   Ingredients:

  • 3 tablespoons of Tomato Jos paste
  • 2 tablespoons of vegetable oil
  • 1 medium-sized onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Cooked chicken or fish (optional)

   Instructions:

  • Heat the vegetable oil in a pot and sauté the onions and garlic until soft.
  • Add the Tomato Jos paste and stir for 2-3 minutes.
  • Season with curry, thyme, salt, and pepper.
  • Add a little water and let it simmer for 5-7 minutes.
  • If desired, add cooked chicken or fish and let it simmer for another 5 minutes.
  • Serve with rice, yam, or plantains.

 2. Vegetable Jollof Rice

   Ingredients:

  • 4 tablespoons of Tomato Jos paste
  • 2 cups of rice (parboiled)
  • 1 large bell pepper, chopped
  • 2 medium-sized carrots, diced
  • 1 cup green peas
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

   Instructions:

  • Heat the oil in a large pot and sauté the onions until soft.
  • Add the Tomato Jos paste and cook for 3-4 minutes, stirring occasionally.
  • Add the rice, bell pepper, carrots, and peas to the pot, along with the curry powder, thyme, salt, and pepper.
  • Add enough water to cover the rice and bring to a boil.
  • Lower the heat, cover the pot, and let it simmer for 20 – 30 minutes or until the rice is cooked.
  • Fluff the rice with a fork and serve hot.
