2 cups long grain rice, rinsed and strained
2 cups chicken broth
2 cups water (+ more if necessary)
1⁄4 cup olive oil

1 lb. Nigerian Brown Bean flour OR Black eyed pea flour (available at Whole Foods, online, or grind your own!)

2 lbs. fresh tomatoes
