INGREDIENTS
2 cups long-grain rice, rinsed and strained
2 cups chicken broth
2 cups water (+ more if necessary)
1⁄4 cup olive oil
3 Tbsp tomato paste (Tomato Jos brand, of course) 4 garlic gloves, grated
1-2 red bell or sweet peppers, chopped
1-2 yellow onions, chopped
4 large roma tomatoes OR a can of diced tomatoes 2 Tbsp fresh thyme OR 1 tsp dried thyme
1 tsp cumin
1 tsp paprika
1⁄2” piece of fresh ginger, grated (optional) salt to taste
Optional Additions:
+ chicken + shrimp + crayfish
DIRECTIONS
- Puree tomatoes, onions and peppers in a blender until mostly smooth. Set aside.
- Heat oil in a large pan over medium heat. Add spices and grated ginger. Stir slowly for 1-2 mins, allowing the spices to infuse the oil and become aromatic.
- Add the pureed blend of tomatoes, onions and peppers.
- Add chicken stock and one cup of water. Bring to boil.
- Add tomato paste and continue a slow boil for 3-5 mins.
- Reduce heat and stir in the rice. Add additional cup of water. Cover, and allow to simmer for 10 mins.
- If the rice isn’t completely cooked, add more water slowly. When all of the water has been absorbed.Stir,
add chicken, fish or additional vegetables, serve and enjoy!
