Jollof Rice

INGREDIENTS

2 cups long-grain rice, rinsed and strained

2 cups chicken broth
2 cups water (+ more if necessary)
1⁄4 cup olive oil

3 Tbsp tomato paste (Tomato Jos brand, of course) 4 garlic gloves, grated
1-2 red bell or sweet peppers, chopped
1-2 yellow onions, chopped

4 large roma tomatoes OR a can of diced tomatoes 2 Tbsp fresh thyme OR 1 tsp dried thyme
1 tsp cumin
1 tsp paprika

1⁄2” piece of fresh ginger, grated (optional) salt to taste

Optional Additions:
+ chicken + shrimp + crayfish

DIRECTIONS

  1. Puree tomatoes, onions and peppers in a blender until mostly smooth. Set aside.
  2. Heat oil in a large pan over medium heat. Add spices and grated ginger. Stir slowly for 1-2 mins, allowing the spices to infuse the oil and become aromatic.
  3. Add the pureed blend of tomatoes, onions and peppers.
  4. Add chicken stock and one cup of water. Bring to boil.
  5. Add tomato paste and continue a slow boil for 3-5 mins.
  6. Reduce heat and stir in the rice. Add additional cup of water. Cover, and allow to simmer for 10 mins.
  7. If the rice isn’t completely cooked, add more water slowly. When all of the water has been absorbed.Stir,

add chicken, fish or additional vegetables, serve and enjoy!
