Nigerian Red Stew

INGREDIENTS

2 lbs. fresh tomatoes
2 medium yellow onions, thinly sliced
1 lb. of steaks in 1-2 inch cubes OR ground beef (optional)
1⁄2 cup chicken stock
1⁄2 cup water
2 Tbsp tomato paste (Tomato Jos brand, of course)

DIRECTIONS
  1. Heat a large saucepan over medium high heat. Add water, stock, spices and salt. Bring to a simmer. Add meat. Simmer until the meat is tender and cooked all the way through. Remove the meat. Set aside remaining broth for later use.
  2. Stir together the tomatoes and 1⁄2 of the onions. Blend if you prefer a smoother consistency. Simmer until excess liquid has evaporated.
  3. Heat vegetable oil over medium high heat. Add remaining onions, tomato paste, and tomato/onion puree. “Fry” the mixture for 10-15 minutes, stirring occasionally.
  4. Add the broth and cook for 10 minutes
  5. Add the meat and pinch of salt. Cover and let simmer for 5 mins.
